Garlic and Chive Mashed Potatoes

This creamy mashed potato recipe has the perfect blend of garlic and chives.  Its a great side dish for Thanksgiving Day! 
 
The Yukon Gold potato not only provides nutrition and excellent flavor; it's versatile and a tasty source of carbohydrates. The Yukon is surprisingly high in vitamin and mineral content. When people think of potatoes with regard to nutritive value, often we consider them to be merely a source of complex carbohydrates in the form of starch. Regrettably the potato is not given the credit it deserves for the nutrition it provides.  Its a great source of fiber and potassium, which are good for the digestive tract and bone strength.  I can't imagine our kids not loving it! 

We enjoyed this with my slowcooked pork chops and applesauce!

Slow Cooked Pork Chops and Applesauce


Slow cooking pork is a wonderful was to get extremely tender and moist meat.  It's an easy meal that consists of combining ingredient's and walking away.  With the right mixture of spices, its terrific. Super tender and flavorful. Its also a fantastic Autumn dish!

Pumpkin Soup


This DELICIOUS, creamy, guiltless soup is a definite must try.  Topped with crispy croutons and fresh parsley it's simply divine!

This was my first time experimenting with pumpkin soup and thankfully it all worked out.  I had leftover heavy cream in my fridge from vodka sauce I made last week and with having tons of pumpkins around these days, I thought this would be a perfect meal to make my family on this chilly Halloween day. 

Please make sure to follow my instructions on only processing 1 cup at a time,  I had an explosion in my kitchen making an absolute mess.  Lol.  This happened to be a very filling dish so serve just enough to leaving room for your next course.

Chicken Rollatini Stuffed with Proscuitto and Goat Cheese


Baked Chicken cutlets dipped in lemon and olive oil, and coated in a combination of bread crumbs grated cheese then rolled with prosciutto, goat cheese and shallots and cooked until golden.  I served this with baked sweet potatoes mixed with onions and garlic.

I made this dish last night for my husband who had a very long and stressful day at work.  I used prosciutto and goat cheese because they are two of his favorites. I thought the saltiness from the prosciutto and the creaminess from the goat cheese was a great combination.  But to my surprise it was a absolute HIT with my 18 month old.  The chicken was moist and every bite left you wanting me.

Ive made Chicken Rollatini many times before.  You have such flexibility with flavors and ingredients.  You can stuff it with virtually any vegetable or cheese.

Whole Wheat Blueberry Muffins


These are moist and delicious blueberry muffins loaded with tons of blueberries.  With just 80 calories per 1 cup and virtually no fat, blueberries have many nutritional benefits.  In just one serving it offers more then 25% of your child's daily vitamin C which aids in a healthy immune system,  plus lots of fiber.   Each bite will have you wanting more. 

We know our kids will love them but our whole family will too.  My husband is very health conscience but he loves his sweets.  This recipe definitely satisfies his sweet tooth without all the added calories and fat.

Healthy Homemade Veggie Burgers



I was a vegetarian for over 17 years, up until I meet my husband in 2007.  I started to explore different meats, poultry's and fish and expanded my knowledge on the health benefits certain proteins offer.  But till this day a veggie burger is a staple in my life.

Veggie burgers seems to be my go to food on a busy day for my family.  Luckily I have created this recipe that my whole family loves.  Its packed with veggies, calcium and lots of protein.  I make 1 batch once a month that I freeze and pull out as needed. 

When my son turned 14 months old he started to get very picky with his foods.  So being able to combine all the essential vitamins he needs in a day was perfect. Its super simple and a great alternative to store bought burgers.

Banana Muffins


Occasional in my home a few bananas tend to get ripe faster then I expected.  So my husband and I are always experimenting with different muffin and bread recipes.  But this one takes the cake, we used whole wheat flour, organic agave syrup instead of white sugar and much less butter then your ordinary recipe. 

My 18 month old loves these as breakfast or just as a mid-day snack.  They are easy to take on the run and best of all they can be frozen.  Enjoy!
